After our visit to the most northern distillery in Scotland, we headed down the west coast to the Isle of Islay. Blue Collar and Scholar carefully selected a lightly plated-smoked and sweet creamy vanilla expression. Bunnahabhain 12 Year paired very well with Chef John D. Walls’s next creation.
This pairing was House Smoked Salmon with steamed cauliflower served with red pepper coulis. It was superbly presented and every course seemed to build off the previous one, leaving everyone anticipating the final pairing of the evening.
